Plant Forward

Plant Forward is a new initiative created by the Vidara Education Program, with the help of our partners, to help guide Miami-Dade County schools in adopting more plant-based meals on their lunch menus.


This initiative is designed to promote environmental sustainability by encouraging the adoption of plant-based foods. By shifting towards more plant-forward diets, we can significantly reduce our carbon footprint, conserve water resources, and lessen the strain on our ecosystems. Through this effort, we aim to inspire a broader movement that embraces plant-based meals as a powerful way to protect our planet while fostering a healthier future for all.

Plant Forward | How it Works

  • 1. Review

    First, we begin by meeting with you to review your school’s current menu and identify opportunities for new plant-based recipes.

  • 2. Select

    After the review, our team we'll select suitable meal plans, collaborate with your staff, and discuss procurement processes.

  • 3. Testing

    With the selected recipes, we’ll conduct taste tests with students and faculty to ensure they meet or exceed expectations.

  • 4. Implement

    Once approved, the plant-based meals will be served, feedback will be gathered, and adjustments will be made over the following weeks.

Results and Analytics

Participating schools will be provided with a comprehensive booklet with data showing their overall improved environmental footprint, such as water saved, emissions lowered, and reduced land use from the menu modifications throughout each semester. These metrics will showcase the school's leadership in sustainability, setting an example for the community and other schools nearby.
